Slow Cooker Parmesan Honey Pork Roast Recipe

Today we are trying another Pinterest recipe. I bought a pork roast to make Barbeque Pulled Pork sandwiches and then I changed my mind. I went looking for a "something different" recipe and found this one by the Six Sisters. They have tons of good recipes on their web site so check them out! ...later..after you read mine..haha

I checked my ingredients and I had everything on hand so I made up this recipe and it's in the Slow Cooker now.

Slow Cooker Parmesan Honey Pork Roast Recipe
Ingredients:
1 (2-3 pound) boneless pork roast
2/3 cup grated Parmesan cheese
1/2 cup honey
3 Tbsp soy sauce
2 Tbsp dried basil
2 Tbsp minced garlic
2 Tbsp olive oil
1/2 tsp salt
2 Tbsp cornstarch
1/4 cup cold water

Spray slow cooker with non-stick cooking spray (or use a liner like I did) Place roast in slow cooker. In a small bowl, combine the cheese, honey, soy sauce, basil, garlic, oil and salt; pour over pork. Cover and cook on low for 6-7 hours or until a meat thermometer reads 160°.
Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Slice roast; serve with gravy. I also made mashed potatoes and the gravy was delicious on them!.

My pork roast was a little over a pound and a half so I cut this recipe in half and there was plenty of sauce. There are over 150 reviews of this recipe and maybe 10 were negative but what the negative ones said was that it burned so I watched this closely throughout the day to make sure there was plenty of juice and there was. Slow Cookers cook differently so make sure you know if your pot cooks hot or not. My old one cooked VERY hot and fast so I had to watch it closely. I love my new one that I bought at a yard sale.

This pork roast was SOOO good!!! I did not do the last step with the cornstarch to make the gravy. Next time I will, just to try it that way too. I just spooned the juices like they were in the pot right onto the finished meat and it was fantastic! Hubby ate this with brown rice. Jonathan and I had Raman Noodles. There is even a little bit left over for one more meal.

Dentist

Ok, time to fess up. I HATE going to the Dentist. I don't know why..maybe because I have soft teeth and lots of fillings. I don't know. I cringe at the sound of the drill, my jaws hurt just thinking about going. If you know me, you might not believe this but I have a small mouth so it makes it hard for the hygienist to clean my teeth..anyway, just all around NOT a pleasant experience. My Dentist and Hygienist are EXTREMELY patient and good with me..I just want to be VERY clear on that.

When Jonathan came along I was determined to not let my phobia rub off on him. When he was very young I would take him with me in his little carrier and the receptionist would watch him while I was getting my teeth cleaned. When he got older he would go back with me and "read" a book and watch. Then when he was 2 the Dentist started checking his teeth and cleaning them. They just did a "getting him used to it" kind of thing. So, thankfully he doesn't mind going and he has only had one or two cavities.

Friday was payday and that means grocery shopping but I told Jonathan that we couldn't shop this Friday because we had our Dentist appointments. They just built a new office and I was kind of looking forward to going this time to check out the new office. Every morning Jonathan and I have a PLAN for the day. This time the plan was, as soon as I was done working I would go straight to the school and pick him up at 2 and then straight to the Dentist office for my appointment at 3 and his at 4.

So, Friday morning it was raining and they were calling for sleet at 4 am when I got up. Jonathan and I checked the weather and the school web site for closings or delays. None. Excellent. Jonathan checked right before we left at 5am and nothing. So, off we go. I drop him off at school at 5:40 and then went to work. When I got to work it was sleeting. Around 7:30 am I get a call from Jonathan, they have closed school. Nice!   (read with sarcasm) I told him there was nothing I could do except maybe call his Aunt...could he call a friend? He said so far he was fine that security hadn't told him to leave yet. I told him if they did he could walk to Walmart and start the grocery shopping hehe..he didn't think so...So he sat there all day long doing homework and watching Netflix on his laptop.

Anyway, I show up at school to pick him up right around 2 and I'm hoping that the Dentist has had cancellations due to the weather and they will get us right in. We walk into the nice new office and the receptionist says Can I help you? (she knows us so this is kind of a weird greeting) I said..we are here for our appointments to get out teeth cleaned..she says ooookaaaay...I said we are a little early our times are 3 and 4 and she says...your appointments are on the 22nd...I said yes...isn't today the 22nd? She said......of March...oh..ooops...Even the lady behind us in line was laughing.Yeah, we were a little early all right! As Jonathan and I were walking out the door I said..Tell NO ONE!! He said..oh no..I'm telling...

So, we got back in the car and drove 35 min. back the way we had just come so we could do the grocery shopping. So, at least that got done!

Honey Mustard Chicken

Ingredients
1 whole chicken or 4 - 6 large chicken breasts(skinned)
1/2 cup butter, melted
1/2 cup honey
1/4 cup Dijon Mustard
1/2 teaspoon salt
1/4 teaspoon pepper
 
Directions
 
Preheat oven to 350. Place chicken into a 13x9 baking dish
Combine butter, honey, mustard, salt and pepper.
Spread over chicken.
Bake for 1 hour or until chicken temps 165.
 


Some of my chicken pieces were a lot thicker than others so I put them into a zip bag and pounded them with a meat hammer. You want them all about the same thickness so they cook the same amount of time.
I also trimmed the fat off with cooking scissors.


 
I only used 4 small chicken breasts for this recipe so I cut the recipe in half. There was still plenty of sauce to serve with the chicken. This chicken has great flavor and is moist. I served this with Raman noodles and used the chicken sauce to flavor the noodles. (didn't use the flavor packet that comes with the noodles) I bought Italian bread off of the "Oops we made too much" rack at Walmart and put it in the freezer. I sliced off a couple slices and put the rest back in the freezer. I put butter on the bread and put it under the broiler for a few minutes. We also had carrots that I seasoned with a little salt and butter.
Just a few ingredients but very flavorful chicken.

SNOW!!!

Today we have SNOW..or at least we had snow on Saturday and Sunday. I didn't even know it was going to snow on Saturday. I got up with Bobby since he was leaving to go bus driving and he said " Looks like I will be driving in the rain". Then I went back to bed and woke up to this beautiful, light, snow. I didn't even have time to go get the obligatory bread, milk and eggs!
 
 This is the perfect kind of snow. It came and went on the weekend so I didn't have to drive in the frozen, slippery kind at 4:30 in the morning! This kind was big, wet flakes that was absolutely beautiful to see. We were able to still get out and about and we kept our power! Yeah!! See, the perfect snow.

Slow Cooker Pineapple Chicken

Today's delicious recipe comes from The Crockin Girls and is one of my FAVORITE!
 
 
Slow Cooker Pineapple Chicken

Ingredients

  • 4 Chicken Breasts
  • 1 Tablespoon Canola Oil
  • 1 Can Sliced Pineapple
  • 1/3 Cup Packed Brown Sugar
  • 1/4 Cup Cornstarch
  • 2 Tablespoons Lemon Juice
  • 3/4 Teaspoon Salt
  • 1/4 Teaspoon Ground Ginger
  • Cooked Rice

Directions

  1. Step One

    In a large skillet, brown chicken in oil (do not cook through).
  2. Step Two

    Transfer to a greased slow cooker.
  3. Step Three

    Drain pineapple; reserving juice. Place pineapple over chicken.
  4. Step Four

    Whisk the brown sugar, cornstarch, lemon juice, salt, ginger and reserved juice until smooth; pour over top.
  5. Step Five

    Cover and cook on LOW for 4-5 hours or until chicken is tender.

                    I have done this with frozen chicken and thawed chicken

OH so good!! I served this with brown rice (I mix in some of the pineapple sauce in my rice) and LeSuer young peas. Those peas are so tender and flavorful I only add a little salt and pepper to them.
 
This recipe is so easy that the first time we had it here Jonathan made it while I was at work.

Chicken Alfredo over Pasta

Here is a handy tip for you to make meals easier for you this week.
 
 You know those bags of chicken you can find at the grocery store? You can find them in 3 pound bags and 5 pound bags. Anyway, sometimes on the weekend I will take the whole bag and dump it into the crock pot with some Italian Salad Dressing and cook on low for 6 hours or until the chicken temps at 165 degrees.Then shred the chicken with 2 forks while it is still in the sauce and set the temp. to "warm" setting for an hour to let it soak up the sauce. Now you have chicken that is ready for recipes for the week. If I cooked 8 pieces of chicken then I will take about half of the chicken and bag it up into a zip bag to use in making dinner.
 
Then I will take the rest of the meat and put it into 4 individual small zip bags for Jonathan to pack in his lunch to take to school. He likes Chicken, Bacon, Ranch and Cheese Wraps.
 
 
For this meal, I used half of the meat out of the larger zip bag or about 2 chicken breasts worth of cooked chicken. Hubby wasn't home so I only had to fix enough for Jonathan and me. I heated up the chicken in a skillet with a little vegetable oil, then I added the jar of Ragu Classic Alfredo Sauce and a bunch of Parmesan cheese. My guess would be about a half of a cup of Parmesan cheese. The Italian flavored chicken and the Alfredo Sauce together taste really good in my opinion. I fixed bow tie pasta that I had in the cupboard (you can use whatever pasta you have on hand)

 
This meal is delicious with a simple tossed salad and those Bisquick Garlic Cheese biscuits too! This made enough that we had leftovers the next night.
 
Now you still have all that other chicken cooked and ready to toss another meal together this week or throw it in the freezer for another time.

Taco Salad

Every week on Tuesday and Wednesday, hubby likes Taco Salad for dinner. This is a quick and easy meal and if I'm not home he will make this himself. (well, trueth be told he will most often make this when I am home too..teehee) Anyway, I found this taco shell bowl you can make yourself instead of buying the bowls already made and then half of them in the box are cracked or broken.

 
So, I found these at Walmart located in the refrigerated section where you find cream cheese and other refrigerated flour tortilla shells. A box of 4 is around a dollar.

 
The directions say to take out the cardboard form that is included in the box and lay the tortilla shell over the form and let it come to room temperature. We are usually in too big of a hurry for that so we microwave the shell over the bowl for 30 seconds and then put it in the pre-heated oven like the directions say and bake for 9 minutes or so on a cookie sheet. This particular bowl I didn't microwave long enough so it didn't form into very much of a bowl but if you do it right they do look like the picture on the box. Hubby takes the browned ground beef and then adds shredded sharp cheddar cheese, onions and tomatoes. If I had any on hand it would have been good with lettuce, black olives, sour cream and salsa too.
Another quick and easy dinner since he will take the left over ground beef and have another one the next night.
