Cheesy Ham Biscuit Pull Aparts

 1 (16.3 oz) Pillsbury Grands Flaky Layers Biscuits (I used the buttery flavor).

 1 egg   

 2 tablespoons milk

 3/4 cup diced ham

 1/4 cup thinly sliced green onion

 1/2 cup shredded cheddar

 1/2 cup Monterey Jack cheese

 1/2 teaspoon granulated garlic

 

 Heat oven to 350 degrees. Spray a 11 x 7 or 12 x 8 glass baking dish with cooking spray. In a large bowl, beat egg and milk with a wire whisk until smooth.

 

 Separate dough into individual biscuits and cut each biscuit into quarters. Gently stir biscuit pieces into egg mixture to coat evenly. Fold in ham, cheese, onions and granulated garlic. Spoon mixture into prepared dish, arrange biscuit pieces in a single layer.

 

 Baked at 350 for 23 - 25 minutes or until golden brown. You can either cut into squares or just pull apart and serve.

Pams Casserole

My sister (Pam) is a OB nurse and a Farmers wife. Her 2 boys are grown men now and have wives of their own. Sometimes she cooks for them and this is the recipe they always want her to make for them. She gave me the recipe over the phone and I quickly jotted it down so I might not have it just right but it turned out good!
 
 
 
 The ingredients are: One pound of ground beef (I used very lean ground beef)
                                8 ounces of cream cheese
                                1 can cream of mushroom soup
                                1/4 cup ketchup
                                1/4 cup milk
                                1 small can of biscuits. (these are the ones you find at the store wrapped up in a package of 4
 
 
Brown the ground beef
on top of the stove in a frying pan or skillet
add salt to taste.
Cut the cream cheese into cubes
and add to the cooked ground beef.
Stir until the cheese is melted
and blended with the ground beef
 
 
In a bowl whisk together
the cream of Mushroom soup,
 milk and Ketchup
add to the pan with the beef mixture
and heat it all up
 
Spray a 8x8 baking dish with cooking spray
Put the beef mixture on the bottom
and then bake at 350 for about 20 min.
Remove from the oven
and place the 8 biscuits on top
Turn the oven temperature up to 400
Bake until biscuits are done.
 
 
I put 8 biscuits on top and figured I had made a mistake and she used 2 cans so I squeezed another can on top too but that was wrong. You really only need one can. They expand and would have filled up the whole top. This was another meal I fixed when Denise was here visiting. We really liked it but it was not enough for the 4 of us. I should have doubled the recipe and made it in a 13x9 pan. I figured 1 pound of ground beef would be enough for 4 people but there wasn't enough meat mixture and too many biscuits. I just gave everyone several biscuits and divided the meat mixture up by 4 and hoped everyone got full!  Hubby went looking for more and I had to tell him it was all gone.  Oopsy At least I know he liked it

UPDATE! My sister reminded me this is supposed to be served over rice or egg noodles!

Crock Pot Italian Chicken over Pasta and Lemonade Pie

My friend from childhood was coming to visit and I wanted an easy recipe that I could throw in the crockpot and not have to worry about while we were visiting. I also wasn't sure about what things she would like to eat so I wanted the recipe to be pretty basic. Denise had sent me some recipes that had cream cheese in them so I figured she would like that and most everyone likes chicken so this was my go to recipe.
 
 Crockpot Italian Chicken:
4 chicken breasts,
1 packet Zesty Italian dressing seasoning,
1 8 oz. cream cheese (softened),
2 cans cream of chicken soup;
Cook on low for 4 hours. If sauce is too thick, add a little milk.
 Serve over pasta.
 
My ingredients. I didn't even get to take a picture of the final plate because we were hungry and we ate it all! Oops...teehee I will tell you though that this is a very good recipe and easy to make as you just put everything in the crock pot and let it cook. I softened the cream cheese and mixed it with the soup and the Italian dressing before I added it to the crock pot and the cream cheese was still lumpy but that didn't matter because it melts while it cooks. When we were about ready to eat I made the bowtie pasta on the stove top following the directions on the box and served the chicken on top of the pasta with some Parmesan cheese sprinkled on the top. We has green beans and Garlic Cheese Biscuits with this.
 
Then for dessert I made this Lemonade Pie. I did make this earlier in the day and the recipe said to make it the day before. It was runny so I put it in the freezer for several hours. It was very good frozen. It was tart!

Lemonade Pie

 1 (6 ounce) can frozen lemonade (USE HALF OF THE CAN. The ones here are 12 ounce cans)

1 (14 ounce) can sweetened condensed milk

1 (8 ounce) container Cool Whip or whipped cream (you need extra to go on top so I would get 2 containers or one larger one~~Renee)

1 graham cracker crust (I buy this all ready made)

Use mixer and mix all ingredients until fluffy. Pour into ready made crust. Refrigerate until firm. I let it set overnight. This can also be made with limeade too or pink lemonade. Top with whipped cream or Cool Whip and garnish with lemons.

Ok so I just now figured out what my problem was in making this pie!!! Yeah!! If you follow the link on here it will take you to the recipe and you can read the reviews written by others who have made this recipe. One in particular was VERY helpful. She pointed out that the recipe calls for 6 ounce can of lemonade and our cans are 12 ounce! Duh...silly me. That is why my pie shell wasn't big enough and it was way too runny. Oops.

This is how much mix I had left after I filled my pie shell and it was VERY watery. So, at least I know now that I used twice as much lemonade as I was supposed to. The pie did freeze in the deep freezer and I served it frozen and we all liked it but it was very tart. I figured if I had had extra cool whip to put on top that might have helped. I will make this again....the right way!!

About This Recipe

"This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time."

Ingredients

    • 3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
    • 4 tablespoons butter
    • 4 tablespoons flour
    • 2 cups milk
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/2 lb Velveeta cheese, diced
    • 1/2 cup sharp cheddar cheese, shredded
    • 1 lb skinless smoked sausage ( Eckrich is my favorite brand)
    • 1/8 teaspoon paprika

Directions

  1. Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  2. Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  3. Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
  4. Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  5. Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
  6. NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

and pretty inexpensive.



I put a pan of water on the stove and added a generous amount of salt to the water. Then I washed, peeled and diced the potatoes into chunks. Probably about 1 inch in diameter and tossed them into the water to cook. I boiled them until they were fork tender. Not too soft as I wanted them to stay in chunks. The fork should slide into the potato with a little resistance. After I tossed the sausage in the frying pan for about 15 min. I added the sausage to the potatoes and tossed it gently to mix it all up.

 
Then I followed the recipe for the sauce.
This step took a good 15 min. of constant stirring.

 
When the sauce just started bubbling and had thickened a little,
 I poured it over the potatoes and sausage.
Then I added the Cheddar shredded cheese and the Paprika.
 I baked this in the oven for about 35 min.
Watch that it doesn't burn on top.

OHHHHH MYYYY GOOODNESSSSSSSSSSS this is SOOOOOOOOO good you just HAVE to make it!!!

It would have been good with a green vegetable but I was so excited to make this since it was the second time I have made it. I could hardly wait to eat, I forgot the vegetable and my son had a friend over ..that asked if anything went with it..oops...This recipe makes a lot. We had enough for 2 meals for 3 adults.

You can go to the link at the very top and read some of the reviews for different ways people changed this recipe. Some added more cheese on top, some didn't like Velveeta so they used all Cheddar Cheese (I used Walmart brand Velveeta and found it was fantastic) Some added peas or broccoli and mixed it all in...I LOVE LOVE Loved the recipe as written. Next time I might try it with ham so hubby will eat it. He isn't a fan of smoked sausage and doesn't eat white potatoes very often but I think he would like this recipe.

I found this recipe on Pinterest but there isn't a recipe attached. It's just a step by step picture.
 
 
 
The Ingredients.
 I used 1 package of chocolate chip cookie squares
that are ready to bake,
my favorite brownie mix
and a pack of 12 Reeses Cups
(they are right around a dollar
 for a pack of 12 cups at Walmart)
 And, my new brownie baking pan
 I received as a birthday present from my sister.

I took about 1 and a half chocolate cookie squares and mashed them down into the pan squares.
 
 Then I placed one Reeses cup upside down in each square
and covered them with brownie mix that I made according to the package directions. Then I baked them according to the box directions checking them to make sure they weren't getting over done.


 
They were done when I stuck a toothpick
 in them and it came out clean

 
These were SOOO good but they are RICH. The first one I shared with my hubby as half was plenty. The Reeses melted and blended with the brownie mix to make it awesome.
 
You could just make up a batch of Chocolate Chip Cookie dough from scratch or even buy one of those cookie pouches on the baking aisle and making them up according to the directions on the pouch and then press the dough down evenly in a 13x 9 pan...then top with the Reeses cups then either make brownie mix from scratch or use a box brownie mix like I did. and make it according to the directions on the box and pour over the Reeses Cups. Then bake. 
 
I have done this in the past using a 13x 9 baking dish and chocolate chip cookie mix from the pouch, Oreo cookies and then brownie mix on top. That was AWESOME too!

Banana Walnut Bread with a Twist


I am SO excited to tell you about this recipe because I kind of made it up! Sort of... I took this recipe and added my own twist to it.


Banana Walnut Bread

 3/4 cup sugar

 1/2 cup Butter, softened

 2 Eggs

 1 cup mashed ripe bananas (I have found that 1 very ripe banana is about a half of a cup)

 1/2 teaspoon vanilla

 1 1/2 cups all-purpose flour

 1 cup chopped walnuts (optional)

 1/2 teaspoon baking soda

 1/2 teaspoon salt

 1/4 teaspoon ground cinnamon

 preheat oven to 350 degrees. Combine sugar, butter and eggs in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add banana and vanilla. Beat at low speed until well mixed. Stir in all remaining ingredients.

Spoon batter into well greased and floured 8 x 4-inch loaf pan. Bake 60-70 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan. Place onto cooling rack. Cool completely.

I am still using the pure vanilla I bought when we went on a cruise to Mexico. I HIGHLY recommend you buy a LARGE bottle if you ever go! (or BEG someone to bring you a bottle if they ever go)

I did add the walnuts and then I decided that I needed to use up a sweet apple I had sitting on the counter so I peeled and cored the apple then I diced it up into really small pieces. I'm not sure what kind of apple it was now but it was either a Gala or a Golden Delicious. It was not a tart, baking apple. It was about a cup of apples that I put in.  Then I thought, what the heck..lets add these strawberries in too but first I cut the green tops off, then I cut them into pieces and mashed them in a separate bowl and added a teaspoon of sugar to about 1/4 cup strawberry mashed up ness..(new word) After the strawberries set for a couple minutes I threw them in the banana bread mix along with the apples and hoped it baked up nice. AND IT DID!!! I will never make plain banana bread again! I poured the batter into 4 mini bread pans and baked it up so I could put some in the freezer for when my parents and sister came to visit and of course I had to share some with my co-workers. They all LOVED it too!

LEMON BARS

I don't seem to have any pictures from when I made this recipe although I know I took them...hmmm not sure what happened. Anyway, this is a quick and easy recipe. Just stir these 2 ingredients together with a big spoon. It is very sticky and fluffy when you mix it up. Spoon it into the 13x9 baking dish a bake.
UPDATE: Yeah! My Mom found a picture of the lemon Bars for me. Thanks MOM!

LEMON BARS
Two Ingredient Lemon Bars......

  This is all you need:

 1 box angel food cake mix( I use Betty Crocker)

 2 cans lemon pie filling

 I used two 21 oz cans of Comstock pie filling ( total of 42 oz)

 Mix dry cake mix and cans of pie filling together in large bowl.

 I just mixed it with a wooden spoon...

 Pour into greased 9 x 13″ baking pan.

 Bake at 350 degrees for 25 minutes or until top is starting to brown.

 NOTE...Mine took the full 25 minutes to get done and did not brown on top at all :))
(NOTE: Mine took about 45 min. to bake and it did brown nicely-Renee)

 Cool on wire rack and sprinkle with powered sugar. It has a melt in your mouth spongy texture.

 I have come across this recipe in a few different places so thanks to those who shared this yummy recipe!

Crockpot Apple Honey Pork Loin

I saw this recipe and thought it looked really good so I thought I would try it.

 
I forgot to take a picture of the pork loin in the wrapper but I bought this at Walmart. Then I made slits in it like the recipe calls for. (see recipe below) and drizzled honey in the slits.


I peeled and cored the apples and then sliced them and inserted the slices of apple into the sliced pork

 
I put sliced apples in the crockpot and sprinkled cinnamon over the apples then I had to cut my pork roast to fit in the pot. Layered more apples on top with more honey and more cinnamon. I set the crockpot to low for 7 hours.

Done! This picture shows the apples on the top of the pork. It kind of looks like fat but this was a very lean piece of pork. I thought this recipe was good but will stick to my recipe for Apple Butter Pork Chops. Less work and better flavor. Even the hubby said this wasn't as good as the other recipe and this one needed brown sugar.





Crockpot Apple Honey Pork Loin


 

Prep time:  15 mins

Cook time:  8 hours

Ingredients

 •2-3 pound pork loin (or two smaller pork loins)

 •3 sliced apples

 •4 Tablespoons honey (approximate)

 •4 Tablespoons cinnamon (approximate)

 

Instructions

 1.Slice the apples and add a layer to the bottom of a crockpot. Sprinkle with cinnamon.

 2.Cut slits into a pork loin about every inch. Do not cut all the way through the meat.

 3.Drizzle a little honey in each slit, then stuff an apple slice in each slit.

 4.Add to crockpot and drizzle with more honey.

 5.Add any leftover apple slices on top of the meat and sprinkle generously with cinnamon.

 6.Cook on low for 7-8 hours.

Olive Garden Alfredo Sauce


Okay so I know I haven't blogged in a very long time but I have an excuse..kind of..well..sort of..well..not really..haha..
I got  a HUGE virus on my laptop and it took a day or two  for hubby to fix it. After that I was trying to figure out where I had downloaded this big bug from and had NO idea so I was afraid to go to places like my blog and Pinterest.
Anyway, then I just got out of the habit of sitting down and putting the recipes on here. I haven't forgotten to take pictures or try new recipes though! So watch out here come a bunch! (hopefully!!!)
This is what we had for dinner tonight.
 
Olive Garden Alfredo Sauce

  1 pkg Pasta (penne or fettuccine)

 1 stick of butter

 1 clove of minced garlic(I used 1 teaspoon minced garlic in the jar)

 1 pint of heavy cream (I used heavy whipping cream)

 1 cup of fresh Parmesan cheese

 2 tbsp cream cheese

 1/4 tsp salt

 1/2 tsp white pepper

  Make Pasta to your liking.

 In a sauce pan over medium heat – melt butter and add garlic and cook for two minutes, then add in heavy cream and cream cheese and heat until bubbling, but do not boil. (This step took about 10 min. or a little longer of constant stirring so the milk didn't burn on the bottom of the pan)

 Add in Parmesan Cheese and mix until the cheese melts. (Mine melted right away)

 Sprinkle in salt and pepper to taste (you don;t need to use all of this, do to your liking).

 Mix the hot sauce into the noodles and serve. Just like Olive Garden. {copy cat} (I added the chicken here)

I put frozen chicken in the crock pot with some Italian Salad dressing and let it cook while we went to church and ran some errands. After I made the Alfredo Sauce and noodles I shredded the chicken and then added the chicken to the Alfredo and noodles. I topped it with some parmesan cheese. This was really good. The sauce was very creamy and had good flavor. I don't know if it tasted like Olive Gardens or not but it was good! I served this with some French bread that I made yesterday and would have been good with a tossed salad.
